Pub Meal @ CrossFit SFS Hume

2 300gm steaks (rump, New York, Sirloin, T-bone, Scotch fillet,, your choice)
6 – 10 green prawns, skewer if you wish before you BBQ
4 scallops
3 sweet potatoes, peeled and cubed
2 large parsnips, peeled and cubed
1 large shallot, minced
1 chilli, minced (choose variety based on how hot you like it)
3 tbsp ghee butter
1 lemon, rinded
1 garlic minced
Fresh parsley to garnish
Salt and black & white pepper to taste
Olive oil

On a plate drizzle the steaks with olive oil and season with salt & pepper
Peel, chop up and boil parsnips and sweet potatoes until soft
Drain leaving a little bit of water on the bottom of the pot and mash until smooth consistency. Add coconut milk if you wish & some ghee butter, and season with salt, black pepper
Place in oven dish place, then in the oven to keep warm in on very low heat
For the sauce, place 2 tbsp ghee in a small sauce pan on medium heat. Once ghee is hot, add in shallots and sauté while you cook the steaks
Heat BBQ (I find this the best but you can use a George foreman grill etc) on medium high heat, and cook the steaks to your liking, my chef’s suggestion is Medium Rare
For the seafood, heat a skillet (or continue using the BBQ) on medium heat. Add ghee and sear scallops on one side (about 40 secs). When you turn the scallops over, add prawns into the skillet. Continue cooking until the prawns are done.
Then plate up steak, seafood & drizzle the sauce over the top.
Garnish with lemon rind and fresh parsley.
